		<description>Fish Cakes:
Ingredients:
Trigger fish - 2 cups
Hot pepper - 1 teaspoon
Chopped onions - 2 oz.
Chopped peppers (red, yellow, green) - 2 oz.
Chopped celery - 2 oz.
Eggs - 2
Lemon juice - 1 teaspoon
Mayonnaise - 2 tablespoons
Bread slices - 6
Bread crumbs - 1 cup
Milk - 1 cup
Flour - 1 cup
Recipe:
Mix the fish, slice of bread, one egg and seasonings together well. Then form mixture into 2 oz. flat round cakes. Mix the milk and one egg together. Dip fish cakes in flour and then in the egg and milk batter. Roll the cakes in breadcrumbs then hot fry until golden brown.
Sauce:
Ingredients:
Fresh corn on the cob - 1
Tomato, peeled and seeded - 1
Mayonnaise - 1 cup
Chopped capers - 1 teaspoon
Chopped pickles - 1 teaspoon
Chopped onions - 1 teaspoon
Garlic - a pinch
Hot pepper - 1 teaspoon
Lemon juice - 1 teaspoon
Roast the corn, then remove and chop kernels. Mix all sauce ingredients together.
Serve with green salad. Garnish with beet, carrot and turnips.
OR!...
2  lbs frozen cod, thawed (fresher tasting) (or trigger fish)
1  cup all-purpose flour, plus
1/2  cup all-purpose flour, to dredge
1 1/2  teaspoons salt
1 1/2  teaspoons paprika
2 (12  ounce) cans cold fresh beer
 oil (for frying)
sift together flour, salt, and paprika.
Stir in enough beer to make batter so it is barely thick enough to coat a spoon. Usually somewhere between one and two cans.
(It may look too thin, but you want it that way, if it&#039;s too thick, the batter will be chewey instead of light and crunchy) Set batter aside while you heat your deep-fryer or deep pan of oil to 375 degrees.
use a candy thermometer if you need to.
Peanut oil is best but any vegetable oil will do.
Cut the cod fillets diagnally into 2 inch wide strips, and remove any pin bones from fish.
Lightly coat fish in flour and shake off excess.
this will allow batter to stick to fish.
When oil is heated, dip fish in batter, let excess drip off, then fry fillets 2 or 3 at a time until golden brown.
Drain on paper towels.
Serve with fries and tartar sauce.</description>
